Josh Niland to open first overseas restaurant in Singapore

Saint Peter owners Josh Niland and Julie Niland are going global as they prepare to open their first restaurant outside of Australia. The ethical and sustainable seafood steakhouse restaurant will open in Singapore’s Edition hotel this November.

While there’s no name or menu yet, Niland will continue to play to his scale-to-tail seafood strengths with the opening described as, “an elegant home for what a sustainable, modern-age, seafood-focused steakhouse is today”.

The restaurant promises to continue Niland’s mission to mitigate waste and create a “circular economy” within the restaurant and lobby bar, while serving an à la carte menu of fish cut to order, sourced from world-class producers and artisanal suppliers.

The restaurant will be joined by “additional concepts” (a Charcoal Fish-meets-hawker stall perhaps? Or a Fish Butchery showcasing Australian seafood abroad?), and will offer all-day dining, from breakfast through to dinner.
It follows the opening of Petermen in St Leonards earlier this year, and the announcement of Saint Peter‘s forthcoming move into Paddington’s The Grand National Hotel, which has been delayed repeatedly since it was first announced in 2022.

Niland pioneered his approach to cooking with almost every part of the fish at Saint Peter, which opened in 2016, and this move cements the chef as a global voice for both Australian cooking and seafood sustainability.

In addition to his growing restaurant empire, Niland has just released a third cookbook Fish Butchery, which showcases Niland’s unique approach to using fish in the same way that butchers cut, dry-age and cook with meat.

The luxe new build Edition is located near Orchard Road, Singapore’s much-loved shopping district, and will be the first Edition in Southeast Asia. The dual towers will include 204 hotel rooms, alongside separate residences. Edition Hotels are an offshoot brand by Marriott International, overseen by Ian Schrager, who helped to forge some of the world’s first boutique hotels and was the co-owner of New York’s iconic Studio 54. Bookings for the hotel are open from December 1, with the restaurant slated for a November opening.

Josh and Julie Niland’s new Singapore restaurant will be located in the soon-to-open The Singapore Edition hotel at 38 Cuscaden Rd, Singapore. It is slated to open in November 2023.
