From March until August, Fish Bar at Fiji Marriott Resort Momi Bay and Tatavu Grill & Bar at Sheraton Fiji Golf and Beach Resort will reflect Moran’s paddock-to-plate philosophy, adding an exclusive dish to the resorts’ restaurants. The dish will be a ceviche dish inspired by traditional Fijian Kokoda – a fish ceviche with of miti (coconut milk) made from scratch – available at both restaurants.
“Fiji offers an exciting canvas to create something truly special with the freshest line-caught seafood and an abundance of fresh vegetables and lush tropical fruits, ” says Moran in a statement. “I can’t wait to explore their kitchen gardens.”
To celebrate the months-long partnership, Moran is also hosting exclusive dinners at both resorts. On Tuesday 21 March, Moran will take over the kitchen at Tatavu for a special three-course dinner. As part of the resort’s multimillion-dollar refurbishment, Tatavu’s facelift boasts a custom multi-level open vertical grill around which Moran will no doubt plan his menu.
Then the celebrity chef will take over Fish Bar on Wednesday 22 March. Here, Moran’s menu will experiment with dishes that hero local meats and seafood paired with Fish Bar’s signature flavoured Fijian salt.
Both dinners will champion local Fijian produce and ingredients – some of which will come directly from the resorts’ kitchen gardens, in true Moran style.
